Golden Pineapple Slaw
A great option for a healthy side dish, this slaw features crushed pineapple, raisins, low-fat yogurt, almonds on top of a classic coleslaw.
1 #10 can Dole Crushed Pineapple, drained
24 cups Dole Classic Coleslaw
4 cups seedless or golden raisins
4 cups peach low-fat yogurt
2 cups cider vinegar
2 tsp. ground black pepper
2 tsp. ground cinnamon
Toasted slivered almonds for garnish
1. Combine crushed pineapple, coleslaw and raisins.
2. Blend together yogurt, vinegar, pepper and cinnamon.
3. Pour dressing over slaw mixture and toss to evenly coat. Cover and refrigerate for 4 to 6 hours or overnight.
4. Garnish with almonds, if desired, before serving.
