Goat Cheese Cheesecake

Goat cheese gives this cheesecake some extra zing, setting it apart from the rest.
Ingredients
2 oz. butter
12 oz. granulated sugar
Zest of 1 lemon
1/4 tsp. vanilla extract
11 oz. goat cheese
29 oz. room tempered cream cheese
10 oz. eggs
6 oz. sour cream
8 oz. finely chopped toasted walnuts
Steps
- Cream butter and sugar. Add lemon zest and vanilla.
- Add goat cheese and cream cheese in chunks until incorporated.
- Add 1 egg at a time until incorporated.
- Add sour cream.
- Sprinkle finely chopped walnuts into silicone bake mold.
- Scoop in batter.
- Bake in water bath for 45 to 60 minutes at 250°F.
- Remove from oven, pour water in sink.
- Put in freezer until cheese cake is firm enough to pop out of mold undamaged.
- Reserve cheesecakes in cooler until plating.
