Goat Cheese and Vegetable Napoleon

Slices of freshly grilled vegetables such as zucchini and red peppers are layered with crumbly goat cheese, then seasoned with olive tapenade between puff pastry triangles.
Ingredients
1⁄2 lb. puff pastry
Egg wash
2-3 zucchini, sliced lengthwise
2-3 red bell peppers, seeded and halved
Olive oil
2 tsp. minced fresh thyme
12-16 oz. soft goat cheese
1 cup black olive tapenade
Microgreens, for garnish
Steps
- Roll out pastry and cut into 3-in. triangles. Transfer to baking sheet and brush tops with egg wash. Bake in 400°F oven 12-15 min., until golden; cool.
- Meanwhile, brush zucchini and red peppers with olive oil and sprinkle with thyme. Grill until tender. Peel peppers and cut into wide strips; cut zucchini slices crosswise in half.
- Split pastry triangles and remove some of soft center. To construct a Napoleon, spread one triangle with goat cheese; top with tapenade and a layer of grilled vegetables. Repeat layers with a second pastry triangle, cheese, tapenade, and vegetables; top with a third triangle. Garnish plate with microgreens.
