Lemonade is getting more sophisticated, with flavors that are much more tart than sweet. Mixologist Kim Haasarud, founder of beverage consulting firm Liquid Architecture, turns to yuzu puree as the base for this bracing version.
3 oz. yuzu luxe sour fruit puree
2 oz. Barritt's ginger beer or ginger ale
2 oz. water
Combine ingredients in a mixing glass with ice. Pour into cocktail shaker and shake until well mixed. Strain into serving glass.
