Fresh Cherry Picnic Salad
Cherries, cucumber, radishes and sugar snap peas tossed with sweet sesame and ginger balsamic vinaigrette.
1 cup sugar snap peas
2 cups pitted fresh sweet cherries
1 med. cucumber, halved, seeded, and sliced 1⁄2-in. thick
1 cup red radishes, cut into wedges
3 tbsp. white wine vinegar
2 tbsp. balsamic vinegar
1⁄2 tsp. sesame oil
1⁄2 tsp. toasted sesame seeds
1⁄2 tsp. grated fresh gingerroot
3⁄4 tsp. salt
1⁄8 tsp. fresh ground pepper
1. Blanch sugar snap peas in boiling water 1 min.; plunge into ice water to cool. Drain and dry.
2. Add cherries, cucumber, and radishes to sugar snap peas.
3. Combine remaining ingredients and mix well. Pour over cherry mixture and toss to coat. Marinate, refrigerated, at least 1 hour.
