10 Island Tilapia portions
5 large sweet potatoes, peeled, diced and roasted
5 cups pineapple chunks
5 cups mango, diced
2 cups red onion, julienned
2 cups avocado, diced
1 cup green bell pepper, sliced
1/4 cup fresh cilantro, chopped
1/4 cup fresh lime juice
3 tbsp. olive oil
1/2 tsp. salt
Cook tilapia portions as directed. Combine remaining ingredients in a non-reactive bowl until well incorporated. Divide fruit salad over ten salad entrée plates and finish by placing an island tilapia portions atop.
