A Fairy’s Fruit Salad

This fun salad features kiwi, apple, mango, fresh mint, honey, orange juice and plain Greek yogurt all nestled in a waffle cone.


1⁄2 cantaloupe, peeled, seeded, diced into 1⁄2-in. cubes
1⁄2 honeydew melon, peeled, seeded, diced into 1⁄2-in. cubes
1⁄2 pint strawberries, stems removed, diced into 1⁄2-in. pieces
1⁄2 pint blueberries
3 kiwis, peeled, diced into 1⁄2-in. cubes
1 apple, peeled, diced into 1⁄2-in. cubes
1 mango, peeled, diced into 1⁄2-in. cubes
1 tbsp. minced fresh mint
1 tsp. honey
4 oz. freshly squeezed orange juice
4 oz. plain Greek yogurt
10 waffle cones


1. In large bowl, combine all fruit.

2. In smaller bowl, combine mint, honey, orange juice and yogurt. Mix well and pour over fresh fruit. Mix to combine.

3. Place fruit salad in refrigerator for approximately 1 hour to chill.

4. Scoop 5-oz. portion into each waffle cone.

Ohio University Director of Culinary Services Rich Neumann was on Wednesday evening awarded NACUFS’ 49th annual Theodore W. Minah Distinguished Service Award, the association’s highest honor.

Neumann’s foodservice career began as an undergraduate at University of Wisconsin at Stevens Point. After his first day as a student cook, he says, his production manager wanted to fire him because he was striving for perfection, not—as she put it—“now and fast.” But he kept with it, eventually moving up to student manager. “If I had quit, I would not be here today,” he says.

Oxnard Union High School District in Oxnard, Calif., is ending its meatless Mondays initiative due to cost and a lack of participation, the Camarillo Acorn reports.

Meatless Monday , which was offered on Fridays during the most recent school year, was the least popular lunch day during the week, according to school officials.
