A far cry from the ballpark standard, this "hot dog" features knockwurst, bacon, and extra-sharp cheddar cheese. Serve on a crusty roll with additional mustard and a side of grilled onions, if desired.
8 knockwurst or large hot dogs
Deli-style mustard, as needed
8 crusty hot dog rolls
8 slices extra-sharp cheddar
16 slices cooked bacon
1. Split knockwurst lengthwise, brush with deli-style mustard, and grill both sides.
2. Split rolls and toast.
3. Place knockwurst on rolls, top each with 1 slice cheddar and 2 slices bacon, and broil or toast to melt cheese and crisp bacon. Serve immediately with additional mustard and a side of grilled onions, if desired.
