A ham and egg sandwich made even better with the addition of pesto. Cheese is added and the sandwich is broiled to golden perfection.
16 slices white bread
5 tbsp. butter
6 tbsp. Dijon mustard
8 slices black forest ham
Salt and pepper
1 dozen eggs, scrambled
1⁄2 cup pesto
8 oz. Gruyère or fontina cheese, shredded
1. Spread 8 slices of bread with butter and mustard. Warm ham and place one slice over each piece of bread. Season generously with salt and pepper.
2. Top each sandwich with scrambled eggs, salt, pepper, 1 tbsp. pesto, and remaining slice of bread.
3. Top each sandwich with 1 oz. cheese and broil until top is bubbling and golden. Season and serve immediately.
