Cream of Mushroom Soup

Warm up with this easy and quick cream of mushroom soup recipe. Including mushrooms and onions, this soup is the perfect way to beat the cold.

Ingredients

4.5 lb. sliced button mushrooms
1 cup Smart Balance Margarine
1 cup diced yellow onion
1/3 cup light vegetarian base
Ground white pepper to taste
Kosher salt to taste
1 cup all-purpose flour
9 cups 1% milk
4 cups water 

Steps

  1. Blanch mushrooms in boiling water. Rinse, drain and reserve.
  2. In saucepot, melt margarine. Add onions and seasonings and saute until tender. Once onions are tender, add mushrooms.
  3. Add flour and make blonde roux.
  4. Add milk to roux mixture, mixing constantly until soup is smooth and creamy. Then cook on low heat, 20 to 25 minutes.
