Cold Asian Noodle Salad
This salad uses hoisin, green cabbage, red bell pepper and sesame seeds, along with Thai rice noodles to create a refreshing and flavorful side dish.
1 package Thai rice noodles
1 tsp. sesame oil
2 tbsp. rice wine vinegar
3 tbsp. soy sauce
1⁄2 tsp. crushed red pepper
1 tbsp. hoisin sauce
5 tbsp. olive oil
2 stalks celery, julienned
5 scallions, diced
1⁄2 cup green cabbage, shredded
1⁄2 cup red bell pepper, julienned
3 tbsp. toasted sesame seeds for garnish
1. Prepare noodles according to package instructions and drain. Combine with all ingredients, except sesame seeds, in large bowl and toss until thoroughly coated.
2. Refrigerate until ready for service. Garnish with sesame seeds.
