Hearty steak tacos with a fruity touch are a delight. The grape salsa adds just the perfect touch of sweetness and tang to these spicy tacos.

Ingredients

1⁄4 cup cumin seeds
1⁄4 cup whole peppercorns
1⁄2 cup orange juice
1⁄2 cup lime juice
1⁄4 cup sherry vinegar
1⁄2 cup olive oil
4 lb. skirt steak, trimmed
1 cup green grapes, halved
1 cup red grapes, halved
1⁄2 cup scallions, chopped
1 jalapeño, seeded, chopped
1 bunch fresh cilantro, chopped
16 corn tortillas
32 oz. jack cheese, shredded

Steps

1. In a pan over medium heat, toast cumin seeds and peppercorns until fragrant,
approx. 3 min. Cool, then grind. Reserve.

2. Combine orange juice and half the lime juice, sherry, and olive oil. Marinate steaks in mixture for at least 30 min.

3. Meanwhile, roast grapes at 350° F. until skin blisters. Cool. In a large bowl, combine grapes, scallion, jalapeño, cilantro, and remaining lime juice, vinegar, and olive oil. Reserve.

4. Remove steak from marinade and season with salt and cumin-pepper mix. Grill over high heat, approx. 4-5 min. per side. Allow to rest.

5. Slice steak on bias and place into warmed tortillas. Top with grape salsa and cheese.

chefs

We started inviting chefs and FSDs from other districts to come prepare lunch. Through featuring different chefs and chef-inspired meals, I’ve found the students have been looking forward to coming into the cafeteria. They are willing to try new things with crazy names, and to ask for their favorite outside items turned healthy.

tapas

I’ve created a high school “focus group” to see what future college students will want in terms of foodservice. This year, I called up two now-seniors from the last group to get 10 of their friends together. I also include a sophomore or two so that I always have a contact for next year. Tapas, grain bowls and late-night breakfast all originated from this group.

making meals

This summer, we teamed up with a church to deliver meals to three housing projects. We brought the meals to the church, and then the church recruited volunteers to deliver the meals to the children. We’ve been very impressed with this new model, and it shows great promise in getting meals to children who otherwise would not be able to leave their housing project.

It’s a group that comprises uncounted noncommercial operations, including Houston Independent School District, which serves 215,000 students.

But from that tragedy has come one of the most impressive feats of foodservice I’ve seen since coming on board at this magazine, partially spearheaded by Nutrition Officer Betti Wiggins , who only just joined the district. For the entire school year,...
