A chopped salad brimming with freshness. Ham, chickpeas, feta and olives add their own distinctive flavors and textures to this salad that is dressed with an herbed vinaigrette.
1 cup chopped romaine lettuce
1 cup chopped iceberg lettuce
1 cup diced roasted red bell peppers or pimientos
1 cup cooked or canned, drained chickpeas
1 cup diced cooked ham
1⁄2 cup diced feta cheese
1⁄2 cup diced black pitted olives
Herbed vinaigrette dressing
1. In mixing bowl, combine all ingredients except vinaigrette. Add vinaigrette and toss well.
2. For service, portion into individual bowls or containers.
