Chocolate Cherry Pecan Muffins

TriStar Summit Medical Center’s popular Chocolate Cherry Pecan Muffins are filled with sweetness and a hint of crunch. These muffins add a pop of color to the hospital’s muffin display and just enough sweetness to make it a customer favorite.
Ingredients
3 ¼ cups water
7 cups Gold Medal Variety Muffin Mix
2 oz. chopped pecans
3 oz. mini chocolate chips
2 oz. chopped maraschino cherries
Steps
- Mix water and muffin mix according to box directions.
- Fold in pecan, chocolate chips and cherries until blended; use caution to not overmix.
- Scoop into large muffin pan sprayed with non-stick spray.
- Bake at 375°F for 12 to 15 minutes, or until golden brown.
