Chinese Lentil and Noodle Salad

A chilled noodle salad with lentils is a refreshing and tasty start to a meal. The Asian dressing packs the greens with flavor.


1 cup USA lentils, rinsed
2 cups water
1⁄3 cup seasoned rice vinegar
2 tbsp. peanut oil
2 tbsp. soy sauce
1 tbsp. grated fresh ginger
1 tbsp. sesame oil
1 clove garlic, minced
6 oz. cooked linguine
2 qt. boiling water
3⁄4 cup chopped green onions
1 cup sliced water chestnuts
1 cup fresh or thawed frozen peas
1⁄4 cup cilantro, chopped


1. Place lentils in medium saucepan with water; bring to boil. Reduce heat, cover and simmer 10-12 minutes, or until lentils are barely tender. Drain, if necessary, and place in medium bowl.

2. Combine vinegar, peanut oil, soy sauce, ginger, sesame oil and garlic. Pour over lentils. Cover and chill. Combine with linguine and remaining ingredients. Chill several hours to blend flavors.

My favorite event—because I’m kind of dorky—is our “May the fourth be with you” (aka “Star Wars”) day on May 4. The whole dining team dresses up, and we offer things like Chewbaklava, Boba Fettuccine and BB-8 Buckeyes. We had a guest cry because they got to take a picture with Chewy.
