Chicken & Corn Queso Soup

2 tsp Olive oil
3 oz Red onion, diced
2 oz Red bell pepper, diced
1 tbsp Garlic, minced
10 oz Corn kernels
2 lb CHEF-MATE® ¡QUE BUENO!® Mild Nacho Cheese Sauce
32 fl oz Chicken Broth prepared with Minor’s® Low Sodium Chicken Base, prepared


  1. In a large pot over medium heat, add oil. Sauté onions, red peppers and garlic for 3-5 minutes.
  2. Add corn and chicken stock and bring to a simmer. Whisk in Mild Nacho Cheese Sauce. Continue stirring until blended. Remove from heat.
  3. In a blender or using an emersion blender, pulse soup until smooth.
  4. Return to stove top and simmer 15-20 minutes.
