Chai Vegan Dulce De Leche Arroz

A homemade vegan Chai that is sure to help you start your morning off right, or end your evening with a perfect warm-up.

Ingredients

¼ cup brown rice syrup
1 ½ tsp. arrowroot
1 tbsp. + 1 ½ tsp.
½ tsp. vanilla bean paste
2 ¾ cups rice milk
2 tsp. Chai Sugar Spice Blend

Chai Sugar Spice Blend
Yield: 2 teaspoons

5/8 tsp. ground cinnamon
½ tsp. ground clove
3/8 tsp. ground cardamom
1 tbsp. + 1 tsp. confectioners sugar

Steps

1. Bring rice milk to a boil and cut heat.
2. Add syrup, vanilla bean paste and arrowroot.
3. Reduce heat to low and cook until color is golden brown.
4. Strain and reserve at 140°F until service.
5. Portion hot rice milk beverage into 6 ounces.
6. Dust with ½ tsp. of Chai Sugar Spice Blend.

Chai Sugar Spice Blend
1. Combine all ingredients. Store in airtight vessel.

They are willing to try new things with crazy names, and to ask for their favorite outside items turned healthy.

I’ve created a high school “focus group” to see what future college students will want in terms of foodservice. This year, I called up two now-seniors from the last group to get 10 of their friends together. I also include a sophomore or two so that I always have a contact for next year. Tapas, grain bowls and late-night breakfast all originated from this group.

This summer, we teamed up with a church to deliver meals to three housing projects. We brought the meals to the church, and then the church recruited volunteers to deliver the meals to the children. We’ve been very impressed with this new model, and it shows great promise in getting meals to children who otherwise would not be able to leave their housing project.

Having never personally experienced a hurricane, I can only imagine the horrors faced by the millions of people whose lives were affected by Harvey and Irma in late August and early September.
