California Avocado-Pineapple Relish
This combination of avocado, pineapple, onion and mint makes a versatile relish. The flavor combination is adaptable to meat, fish or poultry, and would also work well in sandwiches.
1⁄3 cup lemon juice
4 California avocados, sliced
2 cups diced pineapple
1 cup finely chopped onion
1⁄4 cup chopped fresh mint
1 tsp. salt
1⁄4 tsp. crushed red pepper (optional)
1. Gently fold lemon juice into avocado. Fold in remaining ingredients. Chill 1 hour.
2. Serve with grilled fish, poultry or meat or layer it on turkey, ham or cheese sandwiches or wraps.
