Brussels Sprouts-Peanut Hoagie
This Brussels sprouts sandwich with peanuts and apples makes for a hearty mouthful, contrasting textures, flavors and colors.
1 lb. Brussels sprouts, halved or quartered, depending on size
1/2 cup olive oil
2 cloves garlic, minced
2 tsp. salt
Mayonnaise, to taste
4 hero rolls, split
2 Granny Smith apples, julienned
1/2 cup peanuts, toasted and crushed
- Toss sprouts with olive oil, garlic and salt. Roast at 400°F for 10 to 20 min., or until crunchy and caramelized.
- To assemble sandwich, spread rolls with mayonnaise. Layer Brussels sprouts and apples in rolls; top with crushed peanuts.
