A healthful rice dish made with brown rice, asparagus spears, garlic, green onions and shiitake mushrooms.
1 cup shiitake mushrooms, sliced
1 cup asparagus spears, cut into 1-in. pieces
1 clove garlic, minced
1 tbsp. olive oil
3 cups cooked brown rice
1⁄4 cup pine nuts, toasted
1⁄4 cup green onions, sliced
1 tbsp. lemon peel, grated
1. In a skillet over medium-high heat, sauté mushrooms, asparagus and garlic in oil until tender, 2-3 min.
2. Add rice, pine nuts, onions and lemon peel and combine thoroughly. Cook, stirring, another 3-4 min. until completely heated through. Season to taste.
