Banana Blossom Salad

Bananas, chicken and peaches come together in this exotic salad. Asian inspiration makes this artfully plated salad a real treat.


2 cups lemon juice
2 cups lemongrass syrup
1 cup fish sauce
1 banana flower (see note)
Dash lime juice
Dash sugar
1 boneless, skinless chicken breast, grilled
2 fresh peaches
1/4 cup chopped Thai basil
1/4 cup chopped cilantro
1/4 cup chopped laksa leaf
1 tbsp. chopped lemongrass
1/4 cup julienne fresh ginger
2 jalapeños, chopped
1/4 cup sliced shallots, deep-fried
1/4 cup shelled peanuts, deep-fried and crushed


1. In saucepan, combine lemon juice, lemongrass syrup, and fish sauce for dressing; bring to a boil. Boil 2 min.; cool.

2. Peel outer leaves of banana flower; discard. Slice tender inner leaves finely; soak in water with lime juice and sugar.

3. Julienne chicken breast and peaches. Toss with basil, cilantro, laksa, and lemongrass; add ginger, jalapeños, shallots, and peanuts; toss lightly.

4. Add 1 cup dressing; toss lightly. Chill until ready to serve. For service, drain banana

Banana flowers and laksa leaves are available from Asian markets or specialty produce purveyors.

Just over 100 foodservice workers at Mayo Clinic in Rochester, Minn., have voted to join a branch of the Service Employees International Union, KIMT reports.

SEIU Healthcare Minnesota said that 89% of the ballots cast during last week’s election were in favor of unionizing.

The workers are employed by Sodexo, Mayo Clinic’s current foodservice vendor. The clinic recently announced plans to switch vendors to Morrison Healthcare Food Services, a move that has sparked backlash from workers and led to a lawsuit from the SEIU .

The Los Angeles Unified School District has lifted its ban on flavored milk in an effort to reduce food waste, the Los Angeles Times reports.

After implementing the ban in 2011, the district noticed that many students would simply throw away their unused milk containers, causing them to end up in landfills. As Harvard University’s dining staff strike continues , the school has added an extra $25 to student accounts, providing more flexibility for students to eat outside of the dining halls, The Harvard Crimson reports.

The extra funds were added to Crimson Cash and BoardPlus accounts, which students can use to pay for food both on and off campus.
