Apple, Walnut and Blue Cheese Salad
Chef John Graziano says, “The peppery arugula balances against the sweetness of the apples and honey. The blue cheese adds a salty creaminess and the toasted walnuts a nice crunch.”
3 tbsp. honey
1 cup sliced Pink Lady apples
1 cup sliced Green Delicious apples
2 cups arugula
½ cup toasted walnuts
½ cup crumbled blue cheese
1. Mix juice of two lemons with honey.
2. Toss all ingredients together.
