2. Pickled mango of the Middle East
Deriving its name from the Sanskrit term for mango, amba—a tangy condiment made from mango, vinegar, salt, mustard, turmeric, chili and fenugreek—is making headway at Balaboosta in New York City, a Mediterranean-meets-Middle Eastern restaurant that draws inspiration from chef-owner Einat Admony's Israeli roots. Admony menus the pickled relish in a dish called The Israeli Street Fair, which stuffs a pita with chicken, merguez, amba yogurt, shifka peppers and patatas bravas. The H Van, a food truck serving the Fort Lauderdale, Fla., area, serves up the condiment in The S, a pita pocket filled with slow-cooked beef, Israeli pickles, diced onions, amba sauce, tahini sauce and parsley.
