When it comes to grabbing a whole apple to crunch into on the way to class, students at University of Georgia in Athens definitely play favorites. “Every time we have Fuji apples or Granny Smith apples, the kids just go for it,” says Jorge Noriega, executive chef and associate director of culinary development for the university.
When autumn arrives, bringing with it an ample harvest of different apples, it’s time to take advantage of the variety. In honor of apple season, FSD asked Noriega and William Kreiner, general manager and executive chef for campus food service at Rich Products in Buffalo, N.Y., to name a few of their favorite varieties.
