University study aims to get K-12 students to eat their veggies

Researchers at Penn State University in State College, Pa., have launched a study aimed at getting K-12 students to eat their vegetables at lunch, Centre Daily Times reports.

The study, called “Spice It Up,” asks student participants to try samples of vegetables with different seasonings. Participants then rate the samples based on appearance, aroma, flavor, texture, seasoning and general acceptance.

The winning vegetables will be served at a nearby school district that has seen school lunch sales fall 10% since implementing the Healthy, Hunger-Free Kids Act. Researchers hope that the new recipes will encourage students to eat vegetables instead of throwing them away.
