March 7—When Karen Sarno, supervisor of food services for Carroll County Public Schools, learned that Ebb Valley Elementary School was interested in having a Chinese food-themed lunch, she thought it was the perfect opportunity to try offering a healthier version of these foods to the students to see how they would react.
“I’m not against what you call ‘stealthy nutrition,’” Sarno said with a laugh.
And so the teriyaki chicken entree served Thursday was unbreaded and served with brown rice, and the chicken and vegetable egg roll was prepared with a whole grain wrapper.
