Students taste test healthy Chinese food options

Director uses steath health techniques for themed event.

March 7—When Karen Sarno, supervisor of food services for Carroll County Public Schools, learned that Ebb Valley Elementary School was interested in having a Chinese food-themed lunch, she thought it was the perfect opportunity to try offering a healthier version of these foods to the students to see how they would react.

“I’m not against what you call ‘stealthy nutrition,’” Sarno said with a laugh.

And so the teriyaki chicken entree served Thursday was unbreaded and served with brown rice, and the chicken and vegetable egg roll was prepared with a whole grain wrapper.

Through featuring different chefs and chef-inspired meals, I’ve found the students have been looking forward to coming into the cafeteria. They are willing to try new things with crazy names, and to ask for their favorite outside items turned healthy.
