Staten Island hospital showcases winning healthy dishes

Nutritious options won the North Shore-LIJ Health System's Ultimate Chef Healthy Entrée Challenge.

April 4—Chefs at Staten Island (N.Y.) University Hospital, Ocean Breeze, got the chance to serve up their prizewinning dishes in the cafeteria on Tuesday, showcasing the meals that won them second place in the North Shore-LIJ Health System's Ultimate Chef Healthy Entrée Challenge.

Going up against 12 other system hospitals, Aneesah Cox, culinary chef manager, and Natrell Fisher, first cook, prepared dishes to show that hospital food can be healthy, without being bland or boring. For their selection, they cooked chipotle-rubbed pork tenderloin with garlic brown rice pilaf, curry yogurt sauce, mango chutney and collard greens.
