How one university is ensuring the authenticity of its Chinese fare

With some students recently protesting their school’s foodservice over the authenticity of international dishes, Michigan State University is doing everything it can to ensure its Chinese fare is just that, reports the Lansing State Journal.

The university—which has more than 5,000 Chinese students currently enrolled—is implementing The China Experience, an 18-month program bringing three visiting chefs from China’s Beijing Normal University to train campus dining services on Chinese dish preparation.

“We’re sending a message that we’re serious about food and being as authentic as possible in our cooking,” Guy Procopio, MSU’s director of culinary services, told the Journal.
