Greenhouse provides Minn. district fresh produce

Students can enjoy fresh salad greens through the winter.

March 26—At the Wilmar (Minn.) Public School District students have been feasting on fresh greens, even during the winter months, thanks to its district greenhouse.

Approximately 165 pounds of produce have been used from the greenhouse on the district's salad bars and other menu items this school year. The greenhouse grows items such as spinach, kale, beets, Swiss chard, arugula and broccoli.

The greenhouse was formerly part a local treatment center but when the center closed students, who were participating in the Youth Energy Summit program,  sought permission to clean up the greenhouse and use it.
