A short-term goal is to get a community dining program running, Hecker said. The community dining program replaces the need for a central trayline because steam tables are brought to individual floors. “Typically there are no trays,” Hecker said. “It will be more personable, we can control portions better and have an increased level of service.” Hecker hopes to have the program operational in March.
John Dipietro, senior regional director of operations, and Ken Byers, vice president of operations, will oversee the Wingate account for FitzVoyt. Leo Martin, Wingate’s former corporate director of food service, will act as the point person for the account and manage nine residences.
