Fairbanks university to celebrate Alaskan-produced food

Second annual Food Day will include unusual Iron Chef competition.

Oct. 10—An Iron Chef competition between two academic deans will highlight next week's second annual Food Day at the University of Alaska Fairbanks. The event is designed to promote sustainability and healthy eating among the campus and surrounding community.

The “Iron Chef” cookoff will pit the deans of the agricultural and fisheries schools in a “surf vs. turf” challenge. The surf ingredient for School of Fisheries and Ocean Sciences Dean Michael Castellini will be halibut cheeks, while the turf entrée for the School of Natural Resources and Agricultural Sciences Dean Carol Lewis will be reindeer. Each will be assisted by professional UAF chefs. The contest will be judged by members of the Midnight Sun Chefs Association.
