Conn. school’s culinary class gives students hands-on experience

Students participating in The Montessori Middle School’s new culinary arts program are not only learning about nutrition and healthy eating but are preparing the school’s lunches as well.

"It's a 21st century curriculum where students are doing multidisciplinary investigations, Mark Dansereau, director of The Montessori Middle School, says on the school’s website. “They're learning about nutrition and growing food, but they're also doing very hands-on work.”

In the program, student teams rotate weekly to plan menus and prepare food—which have included baked ziti, sushi and enchiladas—and are also taught how to clean and keep kitchen materials organized; serving and presentation protocols; and safe knife skills for cutting and chopping.
