Colorful menu is one result of new school meals

Grouping vegetables by color will encourage more consumption.

March 29—An abundance of colors are coming to the menus at Le Mars (Iowa) Community Schools with the implementation of the new school meal regulations.

Judy Lubben, food service director, says because the regulations never separated vegetables into groups before there was no regulation on the types served. Now, five groups of vegetables are required: dark green vegetables, red and orange vegetables, beans and peas, starchy vegetables and other vegetables. This regulation will brighten the menu at the district's schools. The district has been experiementing with new recipes to incorporate the rainbow of vegetables now required.
