Aramark has revamped its environmental sustainability platform, Green Thread, to include a new sustainable seafood policy and a partnership with food waste monitoring company LeanPath.
Under the new policy, the foodservice provider has pledged to purchase 100% of its U.S.-contracted seafood from sources that meet Monterey Bay Aquarium's Seafood Watch program recommendations by 2018. Aramark is also trying to avoid purchasing “at-risk species” as defined by Seafood Watch.
Through LeanPath, Aramark says it will be able to better monitor food waste and allow mangers to make operational changes to improve sustainability efforts. The foodservice provider will install the LeanPath system across 500 of its highest-volume locations throughout the next year.
The updated platform also addresses environmentally friendly building design, as well as energy- and water-saving efforts.
