500-plus school recipes on tap for healthy makeovers

Menu revamp will take place during the next two years.

April 20—At Brevard Public Schools, in Viera, Fla., more than 500 school breakfast and lunch recipes will be revamped during the next two school years to comply with new federal regulations to make students’ meals healthier.

Lunches will have fewer calories — at times, less than the previous minimum calories required. Nutrition will no longer be “hidden,” such as including vegetables in spaghetti sauce. And certain food sub-groups must be included during the week, such as a variety of different vegetables.
