Last year, we partnered with two small school districts in our area and made a ratatouille sauce [to encourage students to eat vegetables]. In one production kitchen, we made 1,250 pounds and then we split it and went our own ways to see how it would go with our students.
This year we were contacted by the Green Bay School District, because they have a large production kitchen that is underutilized in the summertime. We purchased whole-wheat pizza crust, put on a thin layer of ready-made pizza sauce and enough ratatouille so that each serving had 1/2 cup of vegetables. Then we added mozzarella cheese and sprinkled a little oregano and basil on top and baked it. It’s simple to make and the kids at our high schools really like it.
