I’m a vegan so that is something we’ve really been focusing on in our dining halls. You want to start by offering flavorful, well-prepared vegan options. We offer vegan options at all meals including vegan soups, desserts, yogurts, breads, cheeses, butter alternatives, etc. Another good tip is to try not to feature the word “vegan” in your advertised recipe name. But you should highlight that the item is vegan on the menu signs. We actually sponsor a vegan cooking challenge, which is now in its 10th year. Annually, our chefs compete to develop delicious vegan entrées that help keep our menus fresh and our students engaged.
