I was struggling with convincing middle school students to take fruit and veggies as part of a reimbursable lunch. We had many options, but the fruit and veggies were before the main entrée in the line, so students weren’t taking them. I took chip racks on wheels and put them at the registers so students faced the fruit and veggie choices at eye level. It worked.
