We held an America Coast to Coast dinner in our residential dining hall. We had each destination set up as its own area—once in the dining hall, students were able to enjoy all areas. We picked Boston, Memphis, Austin, San Francisco and Maui. We did research on local restaurants in those areas and selected a few options to serve at each destination.

Where possible, we make grab-and-go items reimbursable. For example, if we’re serving a fruit and milk smoothie, we let students take a granola bar or other grain component to make it count as a meal.

Our elementary menu is currently riding the breakfast-anytime advertising trend by offering Breakfast for Lunch every Tuesday. It ranks as our highest participation, and it was a great way for us to introduce chicken and waffles inspired by an IHOP dish.
