Approachable sushi

Make sushi more palatable to a wider, less adventurous audience by substituting the fish for more recognizable proteins. At NC State, we have developed a Spring Chicken Roll and are working on a Barbecue Roll that has our house-smoked pulled pork barbecue and coleslaw.
